Kitchen Lead/ Wood Fired Pizza Chef/ BBQ Pit Leader
JOB DESCRIPTION ($20-$40/HOUR DOE + TIPS)
We are definitely looking for a needle in a haystack! As our business grows we are seeking an extremely hardworking, caring, grounded individual to gradually step in as kitchen leader.
Our kitchen operates on a very sustainable timetable, because we still need to find the time to harvest the food as well as serve it to the community! We are open year round Thursday-Sunday from noon until 6-8 pm depending on the day/season.
While we do not serve a "fancy" menu, we care deeply about the ingredients use: produced here on the farm, local, organic, whole foods.
We currently have one family member looking to step back as kitchen leader and move towards heading up cheese making at the creamery.
The kitchen leader would need to have the following skills:
-Past experience as head chef
-Upbeat, empathetic, conscientious, friendly
-Calm, clear, caring communication skills
-Previous experience in a kitchen including safe food handling, allergy awareness, cleanliness, ability to work under stress, high energy.
-Team player. There is no job below anyone here. We all take out the trash, clean the bathroom, stack wood, and weed the garden in the hot sun.
-Organizational skills
-Ability to help keep staff busy in slow times
-Imagination and motivation for creating new menu items featuring our farm's (and local) products. Also, strong desire to serve food that has integrity. Ability to be flexible with menu depending on what is coming out of the fields that week (and readiness to change the menu when it unexpectedly changes)
-ability to lift and carry at least 50 lbs
-ability to work in an almost entirely woman operated kitchen.
-Self motivated, dependable, trustworthy, hardworking, mindful, visionary who is not afraid to get dirty!
Our kitchen has some atypical equipment including a wood fired grill, 100% wood fired smoker, and 100% wood fired pizza oven. We are hoping to hire someone with experience or skills in one or more of these areas:
-Smoker: Our vertical smoker means the operator needs to be agile on a ladder, able to climb up and down many many times a day. Knowledge of smoking meat. Willingness to get dirty and clean the smoker.
-Fornio/pizziolo: Knowledge of pizza making from dough to fire in a wood fired brick oven. Our oven is outdoors year round, so willingness to brave the elements! (In the winter it is just outside glass doors of the barn so it's not completely outside)
-Grill: In the summer we cook our grass fed beef burgers in an outdoor pavilion kitchen on a wood fired grill. We are looking for someone who will lovingly flip burgers over a hot fire all day!
Optional experience/ interest:
We are not just a kitchen, we are a farm, dairy, brewery, creamery, and distillery too! Possible work could (but certainly does not have to) dabble or dive into the following areas:
-field work raising vegetables
-crop work operating/ repairing heavy machinery
-Herd management/ milking cows caring for calves, or petting zoo
-Brewery/ distillery operations
-Creamery/ Affinage/ cheese monger/ sales manager
-Marketing our farm/ products on social media and beyond
-Logging in the winter
About Us
Our 5th generation family owned and operated dairy Farm/ Brewery/ Farm to Table restaurant is expanding! We currently sustainably milk a herd of 60 pasture raised LOVELY cows, grow 5 acres of vegetables for our farm to table restaurant, raise 100% of the grass fed beef we use at the restaurant, operate a seasonal farm stand selling our raw milk and local specialty items and ice cream, sustainably harvest 100% of our own hardwood which we use to cook our grass fed beef/ run our BBQ smoker/ and heat our wood fired brick oven for pizza, and harvest all our own forage to feed the cows. We grow hops for our beer as well as use local fruits for fermentations, and usually have about 18 of our own beers on tap that we brew here in our 14 barrel brew house. While we are not certified organic, we use mostly organic practices, regenerative farming and consider sustainability in all we do. We are currently building a creamery, which will soon produce natural raw milk cheese from our cows milk, as well as pasteurized fresh cheese and cultured butter. AND we will be opening a distillery where we will use our non GMO corn, and other local ingredients to make spirits. Can you see why we need help?!
We are looking for someone who deeply cares about food to help in the kitchen and/or farm. We have a large 60x60 1830's post and beam barn for indoor seating year round and virtually unlimited outdoor seating. The menu includes our own grass fed beef burgers, wood fired pizza with house made dough, locally grown hand cut fries, salads and sides with our vegetables and local seasonal produce, tacos, designer grilled cheese paninis, cheese slates, etc. In our custom vertical wood fired smoker we smoke ribs, chicken wings, chicken, and brisket. With the opening of the creamery we plan to make our menu even more cheese centric!
People coming to our farm do not just TASTE the terroir, they are IN it! We are really selling an experience as much as nourishment and liquid joy. We have a gorgeous view of our cows grazing on rolling hills with Mt. Wachusett in the background. Play area for children to enjoy, and run around on the grass. We host OCR races for thousands of people (where adults get to play and run around in the forest, fields and mud as well!) We have a new concert venue in our back field. Most our 1300 acres of land is protected with conservation restrictions so the fields and forests will remain that way FOREVER. We LOVE our land, our sweet cows, and the food we raise. We want to SHARE the bounty and lifestyle with our community, and with you!
